Late Dinner
If you're going to cook with leftovers, be sure the leftovers consist of organic pinto beans that you pressure cooked and stored for later use, some finely chopped onions and bell pepper because you can't help but chop more than you need.
Start heating the beans in some oil and some crushed garlic add salt and pepper. Sweat the onions and peppers in a pan. Add half of them to the beans. To the rest of them, add two beaten eggs, salt and pepper, let sit for a minute and then scramble. Heat some corn tortillas in the toaster oven, on a grill or on a hot iron skillet. Serve the beans and some eggs on the corn tortillas. Add diced tomatoes and hot sauce.
